Cutting Order Help

Cutting Order Template:

  1. HAMBURGER: Can be packaged in either 1 lb. or 2 lb. packages

  2. ROASTS: Chuck and Arm roasts can be de-boned. Sirloin Tip and Rump Roasts are also available and come boneless.

    * If you do not cook many roasts you may choose a certain number of roasts and add the rest to hamburger

  3. STEAKS: Are cut to order, standard cut is 3⁄4 in. You can have them wrapped 2 per package for less waste.

    • T-bone steak consists of two cuts (Filet & New York Strip) specify your preference if you like T-bone or cut into Filet and New York Strip.

    • Ribeye Steak

    • Sirloin Steak

    • Flank Steak

  4. RIBS: Short ribs are available upon request

  5. EASY MEAL PREP IDEAS: Fajita meat and stew meat is an option in 1 lb. packages (uses flank steak and roast)

  6. BRISKET: Available for equal quarters, a half, or whole and can be packaged per pound

  7. Any remaining cuts can be processed as your prefer or into ground beef. (Round & Swiss Steak)
